Classic Chicken Salad

Ingredients:

  • 500 grams of boneless chicken breast, diced
  • 300 grams of boneless chicken thigh, diced
  • 2 tablespoons of olive oil
  • 1/2 teaspoon of sea salt
  • 1/4 teaspoon of black pepper
  • 1/2 teaspoon of granulated onion
  • 2/3 cup of mayonnaise
  • 3 stalks of celery, diced
  • Additional sea salt and black pepper to taste

Instructions:

Step 1:

  1. Lightly coat the chicken breasts and thighs with olive oil.
  2. Season with granulated onion, cracked black pepper, and sea salt.

Step 2:

  1. Place the seasoned chicken in a baking dish and loosely cover with aluminum foil.
  2. Bake at 350 degrees Fahrenheit for 25 to 30 minutes or until the internal temperature of the chicken reaches at least 165 degrees Fahrenheit.

Step 3:

  1. Allow the cooked chicken to cool for at least ten minutes, then refrigerate for at least an hour.
  2. Once cooled, dice the chicken breasts and thighs into small pieces (1/4 inch long and approximately 1/2 inch wide).
  3. In a large bowl, combine the diced chicken, celery, and mayonnaise. Mix well.

Step 4:

  1. Ensure all ingredients are thoroughly combined, then cover and refrigerate for at least one to two hours, or preferably overnight. This allows the flavors to meld together, resulting in a tastier chicken salad.
