Ingredients:

  • 1 lb. boneless skinless chicken breast cutlets
  • Sea salt and freshly ground black pepper, to taste
  • 2 Tbsps clarified butter/ghee, or unrefined coconut oil
  • 6 fresh garlic cloves, crushed whole
  • 1/2 cup chicken bone broth
  • 2 Tbsps raw honey
  • Juice & zest of 1 lemon
  • 2 tsps gluten-free flour, or Arrowroot powder
  • Freshly chopped parsley or basil
  • Additional lemon slices for garnish

Instructions:

1. Preparing the Chicken:
Begin by melting butter or ghee in a large skillet over medium heat. Season the chicken with sea salt and pepper, and sauté it until golden brown and the juices run clear, about 4-5 minutes on each side. Once done, set the chicken aside and cover it to keep warm.

2. Crafting the Sauce:
In the same skillet, add the crushed garlic cloves and sauté for a minute until fragrant. Pour in the chicken broth, bringing the liquid to a simmer while scraping the flavorful brown bits from the bottom of the pan. Then, stir in the honey, lemon juice, zest, and your choice of gluten-free flour, whisking until the sauce thickens slightly.

3. The Final Touch:
Return the chicken to the skillet, spooning the sauce over each piece. Let it cook for an additional minute to ensure everything is heated through. Before serving, garnish with fresh herbs for a burst of color and flavor.

Serving Suggestions:

Pair this dish with steamed asparagus, green beans, or broccoli for a healthy touch. Adding a side of quinoa or brown rice makes it a complete, nourishing meal. Don’t forget to spoon the extra sauce over everything for an added layer of flavor.
