Ingredients

For the Red Velvet Layer:

  • Butter, for greasing the pan
  • Flour, for dusting the pan
  • 1 box red velvet cake mix, plus additional ingredients as called for on the box

For the Cheesecake Layer:

  • 2 (8-ounce) packages cream cheese, softened
  • 2/3 cup sugar
  • 2 large eggs
  • 1/3 cup sour cream
  • 1 tablespoon flour
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon kosher salt

For the Whipped Cream Layer:

  • 2 cups heavy cream
  • 4 tablespoons powdered sugar
  • 2 teaspoons vanilla extract

Instructions

  1. Prepare the Red Velvet Layer:
    • Preheat the oven to 350°F (175°C).
    • Grease and flour a 9-inch springform cake pan.
    • Prepare the red velvet cake batter as per the box instructions.
    • Pour the batter into the prepared cake pan and bake for 30-32 minutes.
    • Let the cake cool slightly in the pan before removing. Level the top for an even layer, if necessary, and set aside.
  2. Make the Cheesecake Layer:
    • In a large bowl, beat the cream cheese and sugar until fluffy (about 3 minutes).
    • Add the eggs, one at a time, beating until combined after each addition.
    • Mix in the sour cream, flour, vanilla extract, and salt until smooth.
    • Pour the mixture into a separate lined 9-inch springform pan.
    • Bake until the center is just set and slightly jiggly, about 1 hour.
    • Allow to cool slightly, then freeze to firm up before assembling.
  3. Prepare the Whipped Cream Layer:
    • Whip the heavy cream, powdered sugar, and vanilla extract in a mixing bowl until soft peaks form (about 5 minutes by hand). Avoid over-whipping.
  4. Assemble the Cheesecake:
    • Carefully place the cheesecake layer on top of the red velvet cake layer.
    • Spread the whipped cream evenly over the cheesecake.
    • Optionally, pipe whipped cream dollops around the edge of the cheesecake for a decorative touch.
    • Garnish with red velvet cake crumbs if desired.
  5. Serve:
    • Once fully assembled, allow the cheesecake to chill until set before serving.

Enjoy this lush and visually impressive Red Velvet Cheesecake that combines the best of both worlds, making any occasion extra special!
