Brown Sugar Brownies with Coffee Frosting

Ingredients:

For the Brownies:

  • 1 cup butter, melted
  • 2 cups packed light brown sugar
  • 3 large eggs
  • 2 teaspoons vanilla extract
  • 2 cups all-purpose flour
  • ½ teaspoon salt
  • 1 ½ teaspoons baking powder
  • 1 cup chopped walnuts

For the Coffee Frosting:

  • 2 teaspoons instant coffee granules
  • 2 tablespoons water
  • ½ cup butter, softened
  • 3 cups sifted confectioners’ sugar

Instructions:

For the Brownies:

  1. Preheat your oven to 350 degrees F (180 degrees C). Grease an 11x7x2-inch baking pan and set aside.
  2. In a large saucepan over medium heat, melt 1 cup of butter. Add in 2 cups of brown sugar, stirring until well mixed and dissolved. Remove from the heat and let it cool to room temperature.
  3. Once cooled, stir in the eggs and vanilla extract until well combined.
  4. In a separate bowl, sift together the flour, salt, and baking powder. Gradually stir the dry ingredients into the wet mixture until just blended.
  5. Fold in the chopped walnuts.
  6. Pour the batter into the prepared baking pan.
  7. Bake for 30 to 35 minutes or until a toothpick inserted into the center comes out clean.
  8. Allow the brownies to cool in the pan on a wire rack.

For the Coffee Frosting:

  1. Dissolve the instant coffee granules in 2 tablespoons of water in a small bowl.
  2. In another bowl, cream together the softened butter and sifted confectioners’ sugar until smooth.
  3. Mix in the dissolved coffee until the frosting is well combined and smooth.
  4. Spread the frosting evenly over the cooled brownies.

To Serve:

  • Cut the brownies into squares and serve with a dollop of the coffee frosting on top.
  • If desired, garnish with additional chopped walnuts or a sprinkle of coffee granules.
