Brown Sugar Brownies with Coffee Frosting
Ingredients:
For the Brownies:
- 1 cup butter, melted
- 2 cups packed light brown sugar
- 3 large eggs
- 2 teaspoons vanilla extract
- 2 cups all-purpose flour
- ½ teaspoon salt
- 1 ½ teaspoons baking powder
- 1 cup chopped walnuts
For the Coffee Frosting:
- 2 teaspoons instant coffee granules
- 2 tablespoons water
- ½ cup butter, softened
- 3 cups sifted confectioners’ sugar
Instructions:
For the Brownies:
- Preheat your oven to 350 degrees F (180 degrees C). Grease an 11x7x2-inch baking pan and set aside.
- In a large saucepan over medium heat, melt 1 cup of butter. Add in 2 cups of brown sugar, stirring until well mixed and dissolved. Remove from the heat and let it cool to room temperature.
- Once cooled, stir in the eggs and vanilla extract until well combined.
- In a separate bowl, sift together the flour, salt, and baking powder. Gradually stir the dry ingredients into the wet mixture until just blended.
- Fold in the chopped walnuts.
- Pour the batter into the prepared baking pan.
- Bake for 30 to 35 minutes or until a toothpick inserted into the center comes out clean.
- Allow the brownies to cool in the pan on a wire rack.
For the Coffee Frosting:
- Dissolve the instant coffee granules in 2 tablespoons of water in a small bowl.
- In another bowl, cream together the softened butter and sifted confectioners’ sugar until smooth.
- Mix in the dissolved coffee until the frosting is well combined and smooth.
- Spread the frosting evenly over the cooled brownies.
To Serve:
- Cut the brownies into squares and serve with a dollop of the coffee frosting on top.
- If desired, garnish with additional chopped walnuts or a sprinkle of coffee granules.
