Ingredients

  • 1/2 lb. cooked chicken, shredded (Rotisserie chicken works great)
  • 1 tbsp olive oil
  • 10 Stand and Stuff Taco Shells (e.g., Old El Paso brand)
  • 1 oz. Taco Seasoning (homemade or store-bought)
  • 1/2 cup onion, diced
  • 1 can (4.5 oz.) Green Chiles, chopped and fully drained
  • 1 can (14.5 oz.) diced tomatoes, fully drained
  • 8 oz. Refried Beans (about 1/2 can)
  • 2 cups Mexican Blend Cheese, shredded
  • Toppings: sliced jalapenos, sour cream, salsa, chopped cilantro, shredded lettuce, or other favorites

Instructions

  1. Preheat the Oven: Begin by preheating your oven to 400 degrees F (200 degrees C). Grease a 9 x 13-inch baking dish with nonstick spray.
  2. Cook the Onion: In a medium skillet, heat the olive oil over medium heat. Add the diced onion and sauté for 2 to 3 minutes until clear and aromatic.
  3. Add Chicken and Seasonings: Stir in the shredded chicken, taco seasoning, drained tomatoes, and green chiles. Combine well and let the mixture simmer for 5 to 8 minutes.
  4. Bake the Taco Shells: Place the taco shells standing up in the prepared baking dish. Bake in the preheated oven for about 5 minutes to crisp them up. Remove from the oven afterward.
  5. Assemble the Tacos: Spoon 1 tablespoon of refried beans into the bottom of each taco shell. Layer the chicken mixture on top, then generously sprinkle with shredded cheese.
  6. Bake the Tacos: Return the tacos to the oven and bake for an additional 7 to 10 minutes, or until the cheese has melted and the edges of the taco shells are slightly browned.
