Ingredients
- 3 cups leftover brown or white rice, cooked
- 1 lb large shrimp, peeled and deveined
- 1/2 tsp chili powder
- 1/2 tsp paprika
- 1/2 tsp garlic powder
- 1/8 tsp cayenne pepper (adjust to taste)
- 1/4 tsp kosher salt
- Freshly ground black pepper, to taste
- 2 large egg whites, beaten
- 1 large whole egg, beaten
- 1/2 medium onion, chopped
- 2 cloves garlic, diced
- 5 medium scallions, chopped, whites and greens separated
- Oil spray
- 1 tbsp sesame oil
- 1 tsp crushed red pepper flakes (adjust to taste)
- 4 tsp soy sauce (adjust to taste)
- 1 tsp Asian fish sauce (or more soy sauce)
Instructions
1. Season the Shrimp:
- In a bowl, season the peeled and deveined shrimp with cayenne pepper, chili powder, paprika, salt, freshly ground black pepper, and garlic powder. Set aside.
2. Cook the Eggs:
- In a hot wok or large skillet over medium-high heat, spray a little oil.
- Pour in the beaten egg whites and whole egg.
- Cook the eggs until set, about 1 to 2 minutes. Remove from the pan and set aside.
3. Sauté Aromatics:
- Increase the heat to high.
- In the same wok or skillet, add sesame oil and sauté chopped onions, scallion whites, diced garlic, and crushed red pepper flakes for about 1-2 minutes, until fragrant.
4. Cook the Shrimp:
- Add the seasoned shrimp to the wok and sauté until they are no longer translucent, which takes about 2 to 3 minutes.
5. Add the Rice:
- Stir in the leftover cooked rice, spreading it evenly in the skillet.
- Allow the rice to sit in the skillet for 2 to 3 minutes to develop a nice browned bottom, then stir to combine.
6. Flavor with Sauces:
- Add the cooked eggs back to the skillet.
- Pour in the soy sauce and fish sauce (or more soy sauce for a fish sauce alternative).
- Mix everything well, ensuring the rice is evenly coated and heated through, which takes about 2 minutes.
