Ingredients:
- 1 cup butter, softened
- 1/2 cup powdered sugar
- 1/4 teaspoon salt
- 1 1/2 teaspoons vanilla extract
- 2 1/4 cups all-purpose flour
- 1 cup finely chopped pecans
- 1 cup powdered sugar for dusting
Instructions:
- Preheat the Oven:
- Preheat your oven to 350°F (180°C).
- Cream Butter and Sugar:
- In the bowl of an electric stand mixer fitted with the paddle attachment, mix the softened butter on medium speed until creamy, which takes about 20 seconds.
- Blend in 1/2 cup of powdered sugar and the salt.
- Mix in the vanilla extract.
- Add Flour and Pecans:
- Sprinkle cornstarch over the mixture (just so it doesn’t blend into one area). With the mixer set on low speed, slowly add in the flour and mix just until combined.
- Stir in the finely chopped pecans.
- Shape the Dough:
- Scoop out the dough 1 tablespoon at a time and roll it into a ball. Place the balls on ungreased baking sheets.
- Baking:
- Bake in the preheated oven for 13-15 minutes, or until the bottom edges are lightly golden. (For anyone having problems with spreading, you can chill the dough balls for 1 hour before transferring them to the baking sheet; this should help.)
- Cool and Coat:
- Remove from the oven and allow them to cool for several minutes. While the cookies are still warm, pour 1 1/2 cups of powdered sugar into a bowl and roll the cookies in powdered sugar.
- Double Coating:
- Transfer the coated cookies to a wire rack to cool. Once the cookies are cool, roll them in powdered sugar once more, this time generously coating them (you can press the sugar into the cookies to give them a thick coating).
- Storage:
- Store the cookies in an airtight container to maintain their freshness.
