Old-Fashioned 7-Minute Frosting

Ingredients:

  • 2 large unbeaten egg whites
  • 1 1/4 cups granulated sugar
  • 1/2 cup cold water
  • 1/2 teaspoon cream of tartar or 1 teaspoon corn syrup
  • 1 teaspoon vanilla

Directions:

  1. Combine the egg whites, sugar, water, and cream of tartar in the top of a double boiler. Mix well.
  2. Place over boiling water and whisk constantly until the mixture reaches stiff peaks. This will take at least 7 minutes, but most likely closer to 10.
  3. Remove from the heat.
  4. Add the vanilla and continue whisking until it’s thick enough to spread.
  5. Makes 5-6 cups of frosting.
