PASTA WITH NEAPOLITAN SAUCE, MOZZARELLA CHEESE, AND BASIL

Ingredients:

  • 250g spaghetti
  • 6 ripe red tomatoes
  • 2 onions
  • 2 cloves of garlic
  • 5 basil leaves
  • 3 tablespoons of olive oil
  • Salt and pepper to taste
  • 100g mozzarella cheese

Instructions:

  1. Begin by preparing the sauce. Place a pot of water on the stove and bring it to a boil. Make a cross with a knife over the tomatoes and add them to the boiling water. After about 5 minutes, transfer the tomatoes to cold water to make peeling easier. Peel the tomatoes and place them in a blender to make a smooth tomato sauce.
  2. In a frying pan, heat the olive oil over low heat. Peel and finely chop the onions, and peel and chop the garlic. Add them to the pan and cook until soft.
  3. Once the onions and garlic are soft, add the tomatoes to the pan. Season with salt and pepper to taste. Allow the sauce to simmer over low heat for about 20 minutes, until it thickens and develops flavor.
  4. While the sauce is cooking, prepare the pasta according to the package instructions. Cook until al dente, then drain.
  5. Once the pasta is cooked, add it to the Neapolitan sauce in the frying pan. Toss the pasta in the sauce until it is well coated.
  6. Tear the mozzarella cheese into small pieces and scatter them over the pasta. Allow the cheese to melt slightly.
