Cinnamon Roll Apple Pie Bake

Ingredients:

  • 2 cans refrigerated cinnamon rolls with icing (8 count each)
  • 2 cups apple pie filling, diced into smaller chunks
  • ½ tablespoon fresh lemon juice
  • 5 tablespoons butter, melted
  • ⅓ cup brown sugar
  • 2 teaspoons cinnamon
  • 1 cup pecans, halved

Garnish:

  • Icing from cinnamon rolls
  • Maple syrup (optional)

Directions:

  1. Preheat the oven to 375°F (190°C). Butter a 3-quart casserole dish and set aside.
  2. Open both cans of cinnamon rolls and set the icing aside. Cut each cinnamon roll into 4 pieces and place all the pieces in the prepared casserole dish.
  3. Melt butter and pour it over the cinnamon roll pieces.
  4. In a medium bowl, combine the brown sugar and cinnamon. Sprinkle the cinnamon mixture over the top of the buttered cinnamon roll pieces.
  5. In a larger bowl, pour both cans of apple pie filling. Cut up the apples into smaller chunks and place them back in the bowl. Add the lemon juice and mix together.
  6. Add the diced apples and filling over the cinnamon roll pieces, then add the pecan halves.
  7. Use a spoon to gently mix these ingredients into the casserole a bit to incorporate, but don’t mix completely.
  8. Cover the casserole with a lid or aluminum foil. Place the casserole dish in the preheated oven and bake for 40 minutes.
  9. Remove the cover and bake for another 3-5 minutes or until golden brown on top. Be careful not to let the pecans burn.
  10. Place all the icing in a microwave-safe bowl and melt slightly for 10 seconds. Drizzle the warm icing over the casserole.
  11. Serve the cinnamon roll apple pie bake warm, and optionally drizzle with maple syrup for extra sweetness.
