INGREDIENTS :
Cheddar Bay Stuffed Biscuit
- 1 package Cheddar Bay Biscuit Mix
- 1 tsp garlic
- 1 tsp Italian Seasoning
Crab Filling
- 1 pound lump crab meat, fully cooked
- ¼ tsp paprika
- ½ tsp onion powder
- ½ cup or more mayonnaise
- 1 tbsp mustard
- ½ sleeve Ritz crackers, crushed
- 1 cup grated parmesan
Lemon Butter Sauce
- 4 tbsp melted butter
- 1 tsp lemon juice
INSTRUCTIONS :
- Prepare the biscuit mix according to the package directions. Set aside.
- Preheat the oven to 375°F (190°C) and spray two muffin tins with nonstick spray.
- In a bowl, combine the lump crab meat, paprika, onion powder, mustard, mayonnaise, and crushed Ritz crackers. Stir well to combine, adjusting the mayonnaise as needed for consistency.
- Using a scoop, place some biscuit mix on a floured hand and form a cup-shaped biscuit.
- Place a scoop of the crab mixture into the center of the biscuit.
- Cover the crab mixture with a little more biscuit dough, sealing the edges.
- Repeat until all the dough and crab mixture are used, and place each stuffed biscuit into a muffin tray.
- Bake for 12 to 15 minutes or until the biscuits are golden brown.
- In a small bowl, mix the melted butter and lemon juice to create the lemon butter sauce.
- Once the biscuits are baked, brush them with the lemon butter sauce.
