Crab Stuffed Cheddar Bay Biscuits with Lemon Butter Sauce

INGREDIENTS :

Cheddar Bay Stuffed Biscuit

  • 1 package Cheddar Bay Biscuit Mix
  • 1 tsp garlic
  • 1 tsp Italian Seasoning

Crab Filling

  • 1 pound lump crab meat, fully cooked
  • ¼ tsp paprika
  • ½ tsp onion powder
  • ½ cup or more mayonnaise
  • 1 tbsp mustard
  • ½ sleeve Ritz crackers, crushed
  • 1 cup grated parmesan

Lemon Butter Sauce

  • 4 tbsp melted butter
  • 1 tsp lemon juice

 

INSTRUCTIONS :

  1. Prepare the biscuit mix according to the package directions. Set aside.
  2. Preheat the oven to 375°F (190°C) and spray two muffin tins with nonstick spray.
  3. In a bowl, combine the lump crab meat, paprika, onion powder, mustard, mayonnaise, and crushed Ritz crackers. Stir well to combine, adjusting the mayonnaise as needed for consistency.
  4. Using a scoop, place some biscuit mix on a floured hand and form a cup-shaped biscuit.
  5. Place a scoop of the crab mixture into the center of the biscuit.
  6. Cover the crab mixture with a little more biscuit dough, sealing the edges.
  7. Repeat until all the dough and crab mixture are used, and place each stuffed biscuit into a muffin tray.
  8. Bake for 12 to 15 minutes or until the biscuits are golden brown.
  9. In a small bowl, mix the melted butter and lemon juice to create the lemon butter sauce.
  10. Once the biscuits are baked, brush them with the lemon butter sauce.
