Ingredients:
- 1 lb lean ground beef
- 1 Tbsp olive oil
- 1 medium-sized red onion, finely chopped
- 2 cloves garlic, minced
- ¼ cup premium taco seasoning
- 12 six-inch flour tortillas
- 24 oz quality salsa
- 1 cup sour cream
- 3 cups shredded Mexican Cheese Blend
- ½ cup water (adjust as needed)
- 1 can of optional green chiles
- 1 can black beans, drained
Instructions:
- Preheat your oven to 375°F (190°C). Lightly grease a standard 9×13-inch baking dish.
- In a spacious skillet, brown the ground beef over medium-high heat. Once done, drain and set aside.
- In the same skillet, sauté onions in olive oil until translucent. Add minced garlic and cook for another minute.
- Return the browned beef to the skillet. Blend in taco seasoning, green chiles, and drained black beans. Add water and let the mixture simmer. If it appears thick, sprinkle an additional 1-2 Tbsp of water.
- Assemble the lasagna by starting with a layer of tortillas in the greased baking dish. Spread a portion of salsa over the tortillas, followed by half of the beef mixture. Evenly dollop half of the sour cream over the beef mixture, spreading it gently. Sprinkle with shredded cheese. Repeat the layering process.
- Finish with a final layer of tortillas, the remaining salsa, and a generous amount of shredded cheese on top.
- Bake in the preheated oven until the cheese bubbles and turns golden brown, typically between 30-40 minutes.
- Once baked, remove from the oven and let it cool slightly before serving.
