Cuisine : American
Prep Time : 15 minutes (plus optional 15-30 minutes for soaking chicken)
Cook Time : 20-25 minutes
Total Time : Approximately 35-40 minutes (plus optional soaking time)
Servings : 4
Ingredients:
- 3-4 chicken breasts, about 1lb, cut into strips
- 4-5 tbsp melted butter
- 3/4 cup all-purpose flour
- 1/2 cup Panko breadcrumbs
- 1/2 tsp salt
- 1 tbsp seasoning salt (such as Lawry’s)
- 1/2 tsp pepper
- 2 tsp paprika
Instructions:
- Preheat the oven to 425°F. Place a large piece of parchment paper on a rimmed baking sheet (10x15x1 inch) and brush butter over the top to grease it.
- If using fresh chicken breasts, soak them in milk or buttermilk for 15-30 minutes before coating to help the coating stick. If using frozen, thawed chicken breasts, they are already moist on the outside.
- In a large paper or ziploc bag, combine all ingredients except for the chicken and melted butter. Add the chicken to the bag and shake to coat. Optionally, for extra crispiness, do a double coat by dunking the coated chicken in a little buttermilk and coating it again in the flour mixture.
- Place the coated chicken on the prepared baking sheet, leaving space between each strip. Bake for 10 minutes, then gently flip the chicken with tongs and bake for another 10 minutes.
- Check the chicken to ensure it’s cooked through (165°F internal temperature). If needed, bake for an additional 4-5 minutes.
- Remove the chicken from the oven and place it on a plate lined with paper towels to absorb excess grease. Serve immediately, or to keep warm until serving, place the chicken on a wire rack on a baking sheet in a 225°F oven.
