Meatloaf with Mashed Potatoes and Cheese

Ingredients:

  • 1 1/2 pounds Ground Beef (85/15)
  • 1/4 yellow onion, finely chopped
  • 2/3 cup seasoned dry breadcrumbs
  • 1/3 cup whole milk
  • 1 large egg, lightly beaten
  • 1/2 teaspoon Kosher salt
  • 1/4 teaspoon coarse ground black pepper
  • 2 pounds potatoes, peeled and cut into 1″ chunks
  • 1/3 cup unsalted butter
  • 1/2 cup whole milk
  • 1 teaspoon kosher salt
  • 1/4 teaspoon coarse ground black pepper
  • 1 cup cheddar cheese, shredded

Instructions:

  1. Preheat the oven to 375 degrees Fahrenheit.
  2. In a large bowl, gently combine the ground beef, chopped onion, breadcrumbs, milk, egg, salt, and pepper. Press the mixture into a 9×9 baking dish.
  3. Bake the meatloaf uncovered for 15 minutes, then remove it from the oven and drain any excess fat.
  4. While the meatloaf is cooking, add the potatoes to a pot and cover them with enough water. Bring the water to a boil over high heat and cook the potatoes for 15 minutes.
  5. Drain the water from the potatoes and add the butter, milk, salt, and pepper. Mash the potatoes until creamy.
  6. Spread the mashed potatoes over the meatloaf in the baking dish, then top them with shredded cheese.
  7. Bake the casserole for an additional 15 minutes, until the cheese is bubbling, and the mashed potatoes are slightly crispy.
  8. Serve hot and enjoy this comforting and delicious meal!
