Soft Peanut Butter Cookies with Peanut Butter Cream Filling

Ingredients:

Cookies:

  • 1 1/2 cups all-purpose flour
  • 1 tsp baking soda
  • 1/4 tsp kosher salt
  • 1/2 cup unsalted butter, softened
  • 1 cup light brown sugar
  • 1 cup creamy peanut butter
  • 1 large egg
  • 1/2 tsp vanilla extract
  • 1/2 cup granulated sugar (for coating)

Peanut Butter Filling:

  • 1/4 cup unsalted butter, softened
  • 1/2 cup creamy peanut butter
  • 1 1/2 cups powdered sugar
  • 2 tbsp milk
  • 1/4 tsp vanilla extract

Instructions:

Make the Cookies:

  1. Preheat oven to 350°F and line baking sheets with parchment paper.
  2. In a bowl, whisk together flour, baking soda, and salt.
  3. In another bowl, beat together butter, brown sugar, and 1 cup peanut butter until light and fluffy.
  4. Beat in the egg and 1/2 tsp vanilla extract.
  5. Gradually mix in the dry ingredients until a dough forms.
  6. Roll the dough into 1-inch balls and then shape them into logs. Coat each log in granulated sugar.
  7. Place the logs 2 inches apart on the prepared baking sheets. Use a fork to make a criss-cross pattern on top of each cookie, flattening them slightly into peanut shapes.
  8. Bake for 10-12 minutes until lightly browned on the edges. Allow the cookies to cool for 5 minutes on the baking sheets, then transfer them to wire racks to cool completely.

Make the Filling:

  1. Beat 1/4 cup butter until smooth and creamy.
  2. Mix in 1/2 cup peanut butter, then add 1 cup powdered sugar, milk, and 1/4 tsp vanilla extract until well combined.
  3. Gradually mix in the remaining 1/2 cup powdered sugar until the filling is smooth and spreadable.

Assemble the Cookies:

  1. Spread 1 tbsp of filling onto the flat side of one cookie and then top it with another cookie to make sandwiches.
  2. Repeat with the remaining cookies and filling.
