Pineapple Upside Down Fudge

Introduction: Indulge in the delightful fusion of pineapple upside down cake and creamy fudge with this delectable recipe. Each bite bursts with the tropical sweetness of pineapple and the richness of fudge, making it a perfect treat for any occasion!

Ingredients:

  • 1 can (20 ounces) crushed pineapple, drained
  • 1 cup unsalted butter
  • 2 cups granulated sugar
  • 3/4 cup heavy whipping cream
  • 1/4 cup light corn syrup
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1 cup white chocolate chips
  • 1/2 cup chopped maraschino cherries
  • 1/2 cup chopped American walnuts

Instructions:

  1. Line an 8-inch square baking dish with parchment paper, leaving a layer hanging down the sides. Grease parchment paper with cooking spray.
  2. Spread the drained crushed pineapple evenly over the bottom of the prepared baking dish.
  3. In a saucepan, melt the butter over medium heat. Add sugar, heavy whipping cream, corn syrup, and salt. Stir until well combined.
  4. Bring the mixture to a boil, stirring constantly. Reduce heat to medium-low and continue to cook until the mixture reaches 236°F on a candy thermometer, stirring occasionally.
  5. Remove the saucepan from heat and stir in vanilla extract, white chocolate chips, chopped maraschino cherries, and chopped American walnuts until smooth.
  6. Pour the fudge mixture over the pineapple in the baking dish. Use a spoon to smooth out the top of the fudge.
  7. Refrigerate the fudge for at least two hours, or until completely set.
  8. Once the fudge has set, remove it from the baking dish using the parchment paper overhang. Cut into squares and serve.
