FRIED POTATOES AND ONIONS

Serves: 2-4

Ingredients:

  • ¼ cup vegetable oil
  • 3 medium Russet potatoes, peeled
  • 1 large yellow onion, thinly sliced
  • Salt and pepper, to taste
  • Optional add-ins:
    • ½ teaspoon garlic powder
    • 1 teaspoon red pepper flakes
    • 1 tablespoon (3 g) chives, chopped

Instructions:

Step 1:

  1. Over medium-high heat, heat the vegetable oil in a sauté pan or cast-iron skillet.
  2. Add the peeled and sliced potatoes and the thinly sliced onions to the heated oil. Season with salt and pepper to taste. You can also add optional ingredients like garlic powder and red pepper flakes at this point.

Step 2: 3. Allow the potatoes and onions to cook, turning them frequently, for 10-15 minutes, or until they are nicely browned and soft. You can cover the skillet if desired to aid in cooking and generate a creamier texture.

Step 3: 4. After cooking, drain the excess oil on a platter lined with paper towels for a few minutes.

  1. Top the fried potatoes and onions with chopped chives and serve!

Tips:

  • If you want to enhance the flavor, try cooking it in butter or bacon grease instead of vegetable oil and consider adding some chopped dill. Just remember to use caution when using butter on high heat because it burns more rapidly than vegetable oil.
  • You can serve this recipe with ketchup, but it’s also delicious with garlic aioli or honey mustard sauce! Enjoy your Fried Potatoes and Onions!

  1. this is so good I have to say I have ate this since I was just a little kid. my mom and dad fixed them for supper and breakfast all the time and I think they are going to be dilated to have them for supper tomorrow night and then I’ll have to fix them all the time and I don’t think they’re going to care. butt that’s just more for me to eat. I have to get some butter and make them that wAy. I have to say I have made them in butter but I had them in 1 inch squares and they were great.i will let you know how they turn out.
