Ingredients:
- 1 lb large raw shrimp (21-26 count), peeled & deveined
- 2 tablespoons fresh lemon juice (from 1 small or 1/2 large lemon)
- 1/4 cup extra light olive oil (not extra virgin)
- 1 tablespoon soy sauce
- 1 tablespoon honey
- 1 tablespoon Cajun seasoning
- 1 tablespoon chopped fresh parsley
Optional Garnish:
- 1/2 tablespoon chopped fresh parsley
- 1/2 teaspoon grated lemon zest
Instructions:
- In a medium bowl, whisk together the lemon juice, olive oil, soy sauce, honey, Cajun seasoning, and chopped fresh parsley. Add the shrimp and stir well to coat.
- Cover and marinate in the fridge for 1 hour, stirring occasionally.
- To make the garnish: In a small bowl, stir together chopped parsley with grated lemon zest – cover and refrigerate until ready to use.
- Preheat the oven to 450˚F (230˚C). Transfer the shrimp to a baking dish large enough to hold them in a single layer. Bake uncovered until firm (8-10 minutes). Avoid over-baking to prevent the shrimp from becoming rubbery.
