Introduction:

Ingredients:
- 1 box white cake mix
- 3 tbsp plain flour
- 1 (3 oz) box strawberry Jello
- 1/2 cup water
- 3/4 cup canola oil
- 2 cups fresh or frozen pureed strawberries (1 cup for cake & 1 cup for icing)
- 4 eggs
- 1 stick butter, softened
- 1 (8 oz) package cream cheese, softened
- 3 cups powdered sugar
Instructions:
- Preheat your oven to 350°F (175°C). Grease and flour a 9×13 inch baking pan.
- In a large mixing bowl, combine the white cake mix, plain flour, and strawberry Jello.
- Add water to the dry mixture and blend well.
- Slowly pour in the canola oil, mixing continuously.
- Beat in the eggs one at a time, ensuring each is fully incorporated before adding the next.
- Fold in 1 cup of pureed strawberries until evenly distributed throughout the batter.
- Beat the batter for an additional 2 minutes to ensure it’s well combined and fluffy.
- Pour the batter into the prepared baking pan, spreading it out evenly.
- Bake in the preheated oven for approximately 45 minutes, or until a toothpick inserted into the center comes out clean.
- While the cake is baking, prepare the cream cheese icing.
Cream Cheese Icing:
- In a mixing bowl, combine the softened butter and cream cheese. Mix until creamy and smooth.
- Gradually add the powdered sugar, mixing until well incorporated.
- Fold in 1 cup of pureed strawberries until the icing is smooth and pink.
- Once the cake has cooled from the oven, spread the cream cheese icing evenly over the top.
- Optionally, garnish with whole strawberries or additional pureed strawberries.
