Ingredients:
- Blackberry Mixture:
- 1 quart fresh or frozen blackberries, rinsed
- 1 cup water
- 1 cup sugar
- 1/2 tsp salt
- 1/2 tsp lemon extract
- Dumplings:
- 1 1/2 cups flour
- 2 tsp baking powder
- 1 tbsp sugar
- 1/4 tsp salt
- 1/4 tsp nutmeg
- 2/3 cup milk
Instructions:
- In a large, wide saucepan, combine the blackberries, water, 1 cup sugar, salt, and lemon extract. Bring the mixture to a boil over medium heat.
- Once boiling, reduce the heat to low and let it simmer for 5 minutes, stirring occasionally.
- In a separate bowl, whisk together the flour, baking powder, 1 tbsp sugar, salt, and nutmeg until well combined.
- Gradually pour in the milk, stirring until a thick batter forms.
- Using a tablespoon, drop spoonfuls of the dumpling batter into the simmering blackberry mixture, spacing them evenly.
- Cover the saucepan tightly with a lid and let the dumplings simmer for 15 minutes, or until they are cooked through and fluffy.
- Once done, remove from heat and let it sit for a few minutes before serving.
- Serve the blackberry dumplings hot, topped with a scoop of vanilla ice cream or a dollop of fresh whipped cream.
