Boston Cream Cake Recipe

Ingredients:

Cake:
  • 1 package yellow cake mix (plus additional ingredients called for on the package, typically water, oil, and eggs)
Filling:
  • 1 cup cold milk
  • 1 (3.4-ounce) package instant vanilla pudding mix
  • 1½ cups Cool Whip (whipped topping)
Chocolate Glaze:
  • 2 (1-ounce) squares unsweetened baking chocolate
  • 2 tablespoons butter
  • 1½ cups powdered sugar
  • 4 tablespoons milk

Directions:

For the Cake:
  1. Preheat the oven according to the yellow cake mix package instructions.
  2. Prepare the cake batter as directed on the package.
  3. Prepare the Pans: Spray two 9-inch round cake pans with cooking spray and lightly dust with flour.
  4. Bake the Cake: Divide the batter between the two prepared pans and bake as directed on the package, until the cakes are golden brown and a toothpick inserted into the center comes out clean.
  5. Cool the Cakes: After baking, allow the cakes to cool in the pans for a few minutes, then invert them onto a wire rack to cool completely.
For the Filling:
  1. Mix the Pudding: Beat 1 cup of cold milk with the instant vanilla pudding mix for 2 minutes using a whisk or an electric mixer.
  2. Add Cool Whip: Gently fold in the Cool Whip (whipped topping) into the pudding mixture. Let the filling stand for 5 minutes to thicken slightly.
  3. Assemble: Place one cake layer on your serving plate. Spread the pudding mixture evenly on top, then gently place the second cake layer over the pudding layer.
For the Glaze:
  1. Melt Chocolate and Butter: In a microwave-safe bowl, combine the unsweetened baking chocolate and butter. Microwave on high for one minute. Stir the mixture until the chocolate is completely melted.
  2. Make Glaze: Add the powdered sugar and 4 tablespoons of milk to the melted chocolate mixture. Stir well until the glaze is smooth.
  3. Glaze the Cake: Pour and spread the glaze over the top of the assembled cake, allowing it to drip down the sides.
  4. Chill: Refrigerate the cake for at least one hour to set the glaze before serving.

Serving:

  • Slice and serve the cake chilled. You can garnish with additional whipped cream or chocolate shavings if desired.
