Cajun Shrimp Pasta with Sausage

Ingredients:

  • 1 lb. large shrimp, peeled and deveined
  • Kosher salt and fresh cracked black pepper, to taste
  • 1 teaspoon Cajun seasoning (or Creole seasoning)
  • ½ teaspoon dried Oregano
  • 2 tablespoons Olive oil
  • 6 oz andouille sausage or smoked sausage, thinly sliced
  • 10 ounces fettuccine pasta
  • ½ yellow onion, thinly sliced
  • 1 red bell pepper, thinly sliced
  • 4 teaspoons Cajun seasoning (or Creole seasoning)
  • 1 teaspoon brown sugar
  • 2-3 cloves garlic, chopped
  • ½ cup crushed tomatoes
  • 1 cup chicken broth, sodium free
  • 1 cup heavy cream
  • ⅔ cup Grated Parmesan
  • 1 tablespoon parsley, chopped

Instructions:

  1. Prep Shrimp: Toss shrimp with salt, pepper, 1 teaspoon Cajun seasoning, and oregano until well coated.
  2. Cook Shrimp: Heat a large skillet over medium-high heat and add olive oil. Add shrimp and cook for 2 minutes, flip, and cook for an additional 1-2 minutes. Remove shrimp to a plate and set aside.
  3. Brown Sausage: Add a bit more olive oil to the skillet, then add sausage slices. Cook until caramelized, about 4-5 minutes. Remove sausage to a plate and set aside.
  4. Pasta: Cook fettuccine in salted boiling water until al dente. Drain and set aside.
  5. Sauté Vegetables: In the same skillet, lower the heat to medium, add more olive oil if needed, and sauté onion, red bell pepper, 4 teaspoons Cajun seasoning, brown sugar, and a pinch of salt. Cook until vegetables are softened.
  6. Garlic & Tomatoes: Add garlic to the skillet and cook until fragrant, about 30 seconds. Then add crushed tomatoes and chicken broth, bringing to a simmer. Stir in heavy cream and simmer for a few minutes.
  7. Combine: Stir in Parmesan cheese until melted and incorporated. Add cooked pasta and sausage to the skillet, mixing well. Heat through for 2-3 minutes. Adjust seasoning with salt and pepper.
  8. Finish with Shrimp: Add the cooked shrimp to the skillet, gently mixing to combine. Heat just until shrimp are warmed through.
  9. Serve: Garnish with chopped parsley before serving.
