CAJUN SHRIMP SCAMPI

Ingredients:

  • 12 raw shrimp
  • 1 serving of pasta (preferably linguine)
  • 2 cloves garlic, minced
  • 2 tablespoons butter
  • 1/2 cup heavy cream
  • Shredded parmesan cheese
  • 1/8 teaspoon dried basil
  • Salt and pepper to taste
  • Flour (for thickening)
  • Cajun seasoning
  • 1/4 cup chopped parsley
  • Olive oil

Directions:

  1. Heat a saucepan over medium-high heat. Add the butter, a drizzle of olive oil, Bring to a boil.
  2. Add the minced garlic and cook for about 2 minutes.
  3. Add the shrimp to the pan.
  4. Season the shrimp generously with Cajun seasoning to your liking.
  5. When the shrimp are pink on one side, flip them and cook for another minute. Then, remove them from the pan, leaving the liquid.
  6. Add the heavy cream, dried basil, chopped parsley, salt, and pepper to the pan.
  7. Bring the sauce to a boil and gradually whisk in sprinkles of flour until the sauce thickens to your desired consistency.
  8. Reduce the heat to medium-low and return the shrimp to the pan.
  9. Toss the shrimp in the sauce until coated evenly.
  10. Serve the shrimp and sauce over cooked pasta, topping with shredded parmesan cheese.
