Ingredient
- 1 head of cauliflower, steamed or boiled until tender in bite-size pieces
- 6 boiled eggs
- 1/3 cup miracle whip or mayonnaise (avoid light versions for fewer carbs)
- 3 tablespoons mustard
- 3 tablespoons pickle relish
- 1/8 cup chopped onion (uncooked), adjust to taste
- Salt and pepper to taste
- Egg slices and parsley for garnish (optional)
Instructions:
- Steam or boil the cauliflower until tender, then cut it into bite-size pieces.
- Boil the eggs until cooked, then peel and separate the yolks from the whites. Mash the yolks and chop the whites into small pieces.
- In a bowl, combine the mashed egg yolks, chopped egg whites, miracle whip or mayonnaise, mustard, pickle relish, chopped onion, salt, and pepper. Mix well.
- Add the steamed or boiled cauliflower to the bowl and toss until everything is evenly coated with the dressing.
- Garnish with egg slices and parsley, if desired.
- Chill the salad overnight in the refrigerator to allow the flavors to meld.
