Ingredients:

  • 1 pound premium ground beef
  • 1 can (28 oz) rich tomatoes
  • 2 fresh garlic cloves, minced
  • 2 tsp organic honey
  • ½ tsp spicy Tabasco sauce
  • 1 bay leaf
  • 1 pack egg noodles, cooked as per package instructions
  • 1 pack (8 oz) cream cheese, softened
  • 6 fresh green onions, finely chopped
  • 1 cup sour cream
  • 2 cups cheddar cheese, freshly grated
  • Salt and pepper to taste

Instructions:

Preparing the Beef Tomato Sauce:

  1. Preheat your oven to 350°F (175°C).
  2. In a skillet over medium heat, brown the ground beef, breaking it apart as it cooks. Once browned, drain any excess fat from the skillet.
  3. Add the minced garlic to the skillet with the beef and sauté until it’s fragrant, usually about a minute.
  4. Stir in the canned tomatoes (with their juice), honey, Tabasco sauce, bay leaf, and salt and pepper to your taste.
  5. Reduce the heat to low and let the mixture simmer for 30 minutes, stirring occasionally. This will allow the flavors to meld together.

Assembling the Noodle Layer:

  1. In a large bowl, combine the cooked egg noodles, cream cheese, chopped green onions, and sour cream. Mix well until all the noodles are coated and the ingredients are evenly distributed.

Layering and Baking the Casserole:

  1. Grease a 9×13-inch baking dish with butter or non-stick spray.
  2. Spread half of the noodle mixture onto the bottom of the prepared baking dish.
  3. Layer half of the beef and tomato sauce over the noodles.
  4. Sprinkle half of the grated cheddar cheese over the beef and tomato sauce.
  5. Repeat the layers with the remaining noodle mixture, beef tomato sauce, and cheddar cheese, ensuring the top layer is covered with cheese.
  6. Cover the dish with a lid or aluminum foil.
  7. Place in the preheated oven and bake for 30 minutes or until the casserole is heated through and the cheese on top is melted and lightly browned.

Serving:

  1. Once baked, remove the casserole from the oven and let it sit for a few minutes to set.
  2. Remove the bay leaf before serving.
