Ingredients:
- 4 Boneless skinless chicken breasts
- 1 tsp Paprika
- 1 tsp Italian seasoning
- 1 tsp Salt
- ½ tsp Pepper
- 1 Tbsp Olive oil
- 2 cups Broccoli florets, steamed and chopped
- ¼ cup Minced bell pepper
- ½ cup Cheddar cheese, shredded
- 4 oz Cream cheese, softened
- ¼ cup Parmesan cheese, grated
- 2 tsp Minced garlic
- Salt and pepper to taste
Instructions:
- Preheat the oven to 400 degrees Fahrenheit (200 degrees Celsius).
- Slice a pocket into the middle of each chicken breast lengthwise, being careful not to cut all the way through.
- Season both sides of the chicken breasts with paprika, Italian seasoning, salt, and pepper.
- In a bowl, combine the steamed and chopped broccoli, minced bell pepper, shredded cheddar cheese, softened cream cheese, grated Parmesan cheese, minced garlic, and salt and pepper to taste.
- Stuff each chicken breast with the broccoli mixture, pressing gently to seal the pocket.
- Heat olive oil in a large skillet over medium-high heat on the stove.
- Sear both sides of the stuffed chicken breasts until golden brown, about 2-3 minutes per side.
- Transfer the seared chicken breasts to a baking sheet lined with aluminum foil.
- Cover the baking sheet with aluminum foil and bake in the preheated oven for 20 minutes, or until the chicken is cooked through and reaches an internal temperature of 165 degrees Fahrenheit (75 degrees Celsius).
- Remove from the oven, uncover, and let rest for a few minutes before serving.
