Introduction: These cheesy mashed potato puffs are the perfect way to transform leftover mashed potatoes into a delicious, crispy, and creamy treat. Ideal as a side dish or appetizer, they combine the comforting taste of mashed potatoes with the irresistible texture of a soufflé-like puff.
Ingredients:
- 2 cups mashed potatoes (room temperature)
- 3 beaten eggs
- 1 cup shredded Monterey Jack cheese, divided
- 1/4 cup finely chopped fresh chives
- Salt and pepper to taste
- Sour cream for serving (optional)
Instructions:
- Preheat oven to 400°F. Grease a mini muffin tin.
- In a large bowl, mix mashed potatoes, beaten eggs, 3/4 cup of cheese, and chives. Season with salt and pepper.
- Spoon the mixture into the muffin tin, filling each cup almost to the top. Sprinkle the remaining cheese on top.
- Bake for 15-20 minutes until puffs are golden and set.
- Let cool for 5 minutes before removing from the tin.
- Serve warm, garnished with extra chives and sour cream if desired.
