Cheesy Mashed Potato Puffs

Introduction: These cheesy mashed potato puffs are the perfect way to transform leftover mashed potatoes into a delicious, crispy, and creamy treat. Ideal as a side dish or appetizer, they combine the comforting taste of mashed potatoes with the irresistible texture of a soufflé-like puff.

Ingredients:

  • 2 cups mashed potatoes (room temperature)
  • 3 beaten eggs
  • 1 cup shredded Monterey Jack cheese, divided
  • 1/4 cup finely chopped fresh chives
  • Salt and pepper to taste
  • Sour cream for serving (optional)

Instructions:

  1. Preheat oven to 400°F. Grease a mini muffin tin.
  2. In a large bowl, mix mashed potatoes, beaten eggs, 3/4 cup of cheese, and chives. Season with salt and pepper.
  3. Spoon the mixture into the muffin tin, filling each cup almost to the top. Sprinkle the remaining cheese on top.
  4. Bake for 15-20 minutes until puffs are golden and set.
  5. Let cool for 5 minutes before removing from the tin.
  6. Serve warm, garnished with extra chives and sour cream if desired.
