Ingredients:
- 4 cups thinly sliced potatoes
 - 3 tablespoons butter
 - 3 tablespoons flour
 - 1 1⁄2 cups milk
 - 1 teaspoon salt
 - 1 dash cayenne pepper
 - 1 cup grated sharp cheddar cheese
 - 1⁄2 cup grated cheese (for sprinkling on top)
 - Paprika (for color)

- In a small saucepan, melt 3 tablespoons of butter and blend in 3 tablespoons of flour. Allow it to sit for a minute.
 - Add all of the cold milk, stirring with a whisk. Season the mixture with 1 teaspoon of salt and a dash of cayenne pepper. Cook the sauce on low heat until it becomes smooth and starts to boil, stirring occasionally with a whisk.
 - Reduce the heat and stir in 1 cup of grated sharp cheddar cheese until it’s well incorporated.
 - Place half of the thinly sliced potatoes in a lightly greased one-quart casserole dish.
 - Pour half of the cheese sauce over the first layer of potatoes.
 - Repeat the process with a second layer of potatoes and cheese sauce.
 - Sprinkle the remaining 1/2 cup of grated cheese on top for an extra cheesy touch.
 - Optionally, sprinkle some paprika on top for color and flavor.
 - Bake the casserole uncovered for about 1 hour at 350°F (175°C).
 - Once the top is golden brown and the potatoes are tender, remove from the oven.
 - Let it cool for a few minutes, then serve your delicious Cheesy Scalloped Potatoes Supreme
