Cowboy Meatloaf and Potato Casserole

Ingredients:

  • 1 pound ground beef
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 cup breadcrumbs
  • 1/4 cup ketchup
  • 2 tablespoons Worcestershire sauce
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • 4 large potatoes, peeled and thinly sliced
  • 1 cup shredded cheddar cheese
  • Chopped fresh parsley for garnish (optional)

Instructions:

  1. Preheat and Prepare: Preheat the oven to 375°F (190°C) and grease a 9×13 inch baking dish.
  2. Mix the Meatloaf: In a large bowl, combine the ground beef, onion, garlic, breadcrumbs, ketchup, Worcestershire sauce, thyme, salt, and pepper. Mix until well incorporated.
  3. Shape and Arrange: Transfer the meatloaf mixture to the prepared baking dish, forming a loaf in the center. Arrange the thinly sliced potatoes around the meatloaf, overlapping slightly. Season the potatoes with additional salt and pepper.
  4. Bake Covered: Cover the baking dish with foil and bake for 45 minutes.
  5. Add Cheese: Remove the foil and sprinkle the shredded cheddar cheese over the meatloaf and potatoes. Return the baking dish to the oven and bake uncovered for another 15 minutes, or until the cheese is bubbly and the meatloaf is thoroughly cooked.
  6. Garnish and Serve: Optionally, garnish with chopped fresh parsley before serving. Enjoy your hearty cowboy meatloaf and potato casserole!
