Ingredients:
- 2 cups sliced strawberries
- 2 cans sliced peaches (15 oz. each) – reserve juices from one can, drain the other
- 1 can mandarin orange segments (11 oz.) – drained
- 1 can pineapple chunks (15 oz.) – drained
- 2 sliced bananas
- 1 cored and diced green or red apple
- 1 ½ cups washed and drained blueberries
- 1 ½ cups washed and halved purple grapes
- 1 lemon
- 3 tablespoons instant vanilla pudding mix (regular or sugar-free)
Directions:
- Begin by zesting the lemon to add a burst of citrusy flavor to your fruit salad.
- In a large bowl, drain one can of peaches, making sure to capture the juices in the bowl. Set the peaches aside in a separate bowl.
- Stir 3 tablespoons of instant vanilla pudding mix into the peach juice, creating a sweet and creamy base for the salad.
- Drain the remaining can of peaches, mandarin oranges, and pineapple chunks. You won’t need the juice from these fruits, so go ahead and discard it.

- Refrigerate the fruit salad for at least 30 minutes before serving to allow the flavors to meld and the salad to chill.
