Ingredients:
- 9 hard-boiled eggs, peeled
- 1/3 cup mayonnaise
- 1/3 cup sweet relish
- 2 teaspoons yellow mustard
- 1/4 teaspoon kosher salt, plus more to taste
- 1/4 teaspoon freshly ground black pepper
- Smoked paprika, for sprinkling
- 18 medium shrimp, peeled and deveined
- 2 tablespoons unsalted butter
- 2 teaspoons Cajun or Creole seasoning (such as Tony Chachere’s)
Instructions:
- Prepare Deviled Eggs:
- Cut each hard-boiled egg in half lengthwise. Remove the yolks and transfer them to a medium bowl.
- Place the egg whites on a serving platter, cut side up, and set aside.
- Mash the egg yolks with a fork until smooth. Stir in the mayonnaise, sweet relish, yellow mustard, kosher salt, and freshly ground black pepper until well combined.
- Using a small spoon, scoop an equal amount of the yolk mixture into each egg white half, creating a slight mound.
- Sprinkle smoked paprika over the top of each deviled egg for added flavor.
- Cover the deviled eggs and refrigerate while you prepare the shrimp.
- Prepare Cajun Shrimp:
- Rinse the peeled and deveined shrimp in a colander under running water, then drain thoroughly. Pat the shrimp dry with a paper towel and transfer them to another medium bowl.
- Sprinkle Cajun seasoning over the shrimp and toss until evenly coated.
- In a large nonstick skillet, melt the butter over medium heat until it starts to shimmer. Swirl the butter to coat the bottom of the skillet evenly.
- Add the seasoned shrimp to the skillet in a single layer. Cook for about 45 seconds, then flip and cook for an additional 45 to 60 seconds, or until the shrimp are pink and cooked through.
- Remove the skillet from the heat and set the shrimp aside.
- Assemble and Serve:
- When ready to serve, top each deviled egg with one Cajun shrimp, pressing gently to secure it in place.
- Arrange the deviled eggs on a serving platter and garnish with additional smoked paprika or fresh herbs if desired.
- Serve immediately and enjoy this flavorful appetizer!
