Double Crust Cheesecake

Who says cheesecake can only have one crust? This double crust cheesecake is the epitome of indulgence. With layers of creamy filling sandwiched between buttery graham cracker crusts, it’s a dessert that will leave you craving for more. Let’s dive into this rich treat!

Ingredients:

For the Crusts:

  • 1 box of graham crackers (about 27 graham crackers), crushed into fine crumbs
  • 1/2 C light brown sugar
  • 1 C salted butter, melted

For the Cake:

  • 2 C heavy whipping cream
  • 3 (8oz) packages cream cheese, at room temperature
  • 1/2 C sugar
  • 1/4 C sour cream
  • 2 tbsp powdered sugar
  • 2 tbsp cornstarch (or use additional powdered sugar)
  • 2 tsp lemon juice
  • 1/2 tbsp vanilla extract

Instructions:

  1. Prepare the Crust: [Note: Instructions for preparing the crust appear to be missing. You might want to add steps on how to prepare and set the crust in the pan.]
  2. Layering the Cheesecake: Once you’ve prepared the filling, sprinkle half of the remaining crumbs over the cake. Use the back of the spoon to even them out over the cheesecake, pressing down gently. Add the remaining crumbs, continuing to smooth and press. It’s okay if you have extra crumbs; try to press them in as tightly as possible.
  3. Set and Chill: Cover the top of the cheesecake with a piece of parchment paper. Press down firmly with your hands to ensure everything is well-packed. Wrap the springform pan completely in plastic wrap. Place it in the refrigerator and let it chill for at least 8 hours. For best results, let it set overnight.
  4. Serving: When ready to serve, carefully remove the cheesecake from the springform pan. Slice it into desirable pieces. I personally love serving it with fresh strawberries on the side. They add a burst of freshness that contrasts beautifully with the rich cheesecake.

Tips & Notes:

  • If you don’t have cornstarch, you can use additional powdered sugar as a substitute.
  • For an added touch, consider drizzling melted chocolate or caramel on top before serving.

Enjoy your heavenly slice of the Double Crust Cheesecake!
