Ingredients:
- 1 cup all-purpose flour
- 1/2 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1/2 teaspoon salt
- 1/2 cup unsalted butter, softened
- 1/2 cup granulated sugar
- 1/2 cup packed brown sugar
- 1 large egg
- 1 teaspoon pure vanilla extract
- 1 cup old-fashioned rolled oats
- 1 cup semisweet chocolate chips
- 1/2 cup shredded coconut (unsweetened or sweetened, based on preference)
- 1/2 cup chopped pecans
Instructions:
- Prep Work:
- Preheat your oven to 350°F (175°C).
- Line two baking sheets with parchment paper or silicone baking mats.
- Chop the pecans and set aside.
- If you’re using unsweetened coconut, you might want to toast it slightly in a dry pan for extra flavor (optional).
- Mix Dry Ingredients:
- In a medium bowl, whisk together the flour, baking soda, baking powder, and salt. This ensures your leavening agents and salt are evenly distributed throughout the flour.
- Cream Butter and Sugars:
- In a large mixing bowl, beat the softened butter with granulated sugar and brown sugar using an electric mixer on medium speed until the mixture is light and fluffy, about 2 to 3 minutes.
- Add Egg and Vanilla:
- Beat in the egg until well incorporated.
- Mix in the vanilla extract.
- Combine Wet and Dry:
- Gradually add the dry ingredients to the wet mixture, beating on low speed just until combined and a dough forms.
- Stir in the Goodies:
- With a spatula or wooden spoon, fold in the rolled oats, followed by the chocolate chips, coconut, and chopped pecans. Ensure everything is evenly distributed without overmixing.
- Form the Cookies:
- Using a cookie scoop or spoons, drop rounded tablespoons of dough onto the prepared baking sheets, about 2 inches apart. They will spread as they bake.
- Gently flatten the tops of the cookies with your fingers or the back of a spoon.
- Bake:
- Place the baking sheets in the preheated oven.
- Bake for 10-12 minutes, or until the edges are set and golden brown but the centers are still soft.
- Cooling:
- Let the cookies rest on the baking sheet for 5 minutes after removing them from the oven. This step is crucial as it allows the cookies to firm up enough to transfer them.
- After 5 minutes, transfer them to a wire rack to cool completely.
- Serve or Store:
- Serve the cookies once they’ve cooled, or store them in an airtight container at room temperature for up to a week.
