Easy Cowboy Cookies

Ingredients:

  • 1 cup all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 1/2 cup packed brown sugar
  • 1 large egg
  • 1 teaspoon pure vanilla extract
  • 1 cup old-fashioned rolled oats
  • 1 cup semisweet chocolate chips
  • 1/2 cup shredded coconut (unsweetened or sweetened, based on preference)
  • 1/2 cup chopped pecans

Instructions:

  1. Prep Work:
    • Preheat your oven to 350°F (175°C).
    • Line two baking sheets with parchment paper or silicone baking mats.
    • Chop the pecans and set aside.
    • If you’re using unsweetened coconut, you might want to toast it slightly in a dry pan for extra flavor (optional).
  2. Mix Dry Ingredients:
    • In a medium bowl, whisk together the flour, baking soda, baking powder, and salt. This ensures your leavening agents and salt are evenly distributed throughout the flour.
  3. Cream Butter and Sugars:
    • In a large mixing bowl, beat the softened butter with granulated sugar and brown sugar using an electric mixer on medium speed until the mixture is light and fluffy, about 2 to 3 minutes.
  4. Add Egg and Vanilla:
    • Beat in the egg until well incorporated.
    • Mix in the vanilla extract.
  5. Combine Wet and Dry:
    • Gradually add the dry ingredients to the wet mixture, beating on low speed just until combined and a dough forms.
  6. Stir in the Goodies:
    • With a spatula or wooden spoon, fold in the rolled oats, followed by the chocolate chips, coconut, and chopped pecans. Ensure everything is evenly distributed without overmixing.

  9. Cooling:
