Fajita Chicken Breasts Casserole

This Fajita Chicken Breasts Casserole is a delicious and easy-to-make dish that’s perfect for a quick weeknight dinner. Here’s how to prepare it:

Ingredients:

  • 3-4 small skinless, boneless chicken breasts (about 1 1/2 lbs or 750g), or 2 large chicken breasts, split lengthwise
  • 2 bell peppers (1 red and 1 green), seeded and cut into strips
  • 1 medium onion, minced
  • 1 tsp cumin powder
  • 1 1/2 tsp chili powder
  • 1 tsp garlic powder or minced garlic
  • 2 tsp paprika
  • Salt and freshly ground black pepper to taste
  • 1 tbsp vegetable oil
  • 1 cup shredded mozzarella cheese or your favorite cheese
  • Fresh chopped cilantro or parsley for garnish

Instructions:

  1. Preheat your oven to 400°F (200°C) and lightly grease a baking dish.
  2. Season chicken breasts on both sides with cumin, chili powder, garlic, paprika, salt, and pepper. Set aside some of the spices for later.
  3. Place the seasoned chicken breasts in the prepared baking dish.
  4. Drizzle vegetable oil over the chicken breasts.
  5. Top the chicken with the strips of bell peppers and minced onions.
  6. Sprinkle the remaining fajita seasonings over the peppers and onions.
  7. Finish by evenly distributing the shredded mozzarella cheese on top of the casserole.
  8. Bake the Fajita Chicken Breasts Casserole for 20-30 minutes, depending on the thickness of your chicken breasts. The chicken should be cooked through and reach an internal temperature of 165°F (74°C). You can also broil the casserole for the last 2 minutes if you want to crisp up the cheese on top.
  9. Remove from the oven and garnish with fresh chopped cilantro or parsley.
  10. Serve immediately, either over cauliflower rice, steamed vegetables, zucchini noodles, or enjoy it on its own.
