Ingredients:
- 1/3 cup olive oil
- 2 large sweet onions, sliced into rings
- 6 boneless, skinless chicken thighs
- 1/2 teaspoon thyme
- 1/2 teaspoon dried sage
- Salt and pepper to taste
- 2 cups beef broth
- 1 teaspoon Worcestershire sauce
- 2 teaspoons balsamic vinegar
- 2 tablespoons flour mixed in a bit of water
- 1 cup shredded Swiss cheese
Instructions:
- Preheat the oven to 350°F (175°C).
- Add the olive oil to an ovenproof skillet over medium heat on the stove, and sauté the onions in it until they are caramelized, about 15 minutes. Remove the onions and set aside.
- Season the chicken with salt, pepper, thyme, and sage.
- Sear the chicken on both sides in the same skillet, browning it well and evenly. Remove the chicken and set aside.
- Stir the beef broth into the skillet along with the Worcestershire sauce and balsamic vinegar.
- Whisk in the flour that has been dissolved in a bit of water to thicken the sauce.
- Saute the sauce until thickened.
- Return the chicken and onions to the skillet and top with the shredded Swiss cheese.
- Bake in the preheated oven for 15 minutes or until the chicken is cooked through.
