Fried green tomatoes

Ingredients:

  • 4 large green tomatoes
  • 2 eggs
  • 1/2 cup milk
  • 1 cup all-purpose flour
  • 1/2 cup cornmeal
  • 1/2 cup bread crumbs
  • 2 teaspoons coarse kosher salt
  • 1/4 teaspoon ground black pepper
  • 1 quart vegetable oil for frying

Instructions:

  1. Slice the tomatoes to about 1/2 inch thick, discarding the ends.
  2. In a medium-size bowl, whisk together the eggs and milk. Place flour on a plate. On another plate, combine cornmeal, bread crumbs, salt, and pepper.
  3. Coat the tomato slices by dipping them first in the flour, then in the milk and egg mixture, and finally dredge them in the breadcrumbs to completely coat.
  4. In a large skillet, pour vegetable oil (enough to have about 1/2 inch depth in the pan) and heat it over medium heat.
  5. Place the coated tomatoes in the frying pan in batches of 4 or 5, making sure they do not touch each other. Avoid crowding to allow even frying.
  6. When the tomatoes are browned, flip them to fry on the other side.
  7. Once done, transfer the fried tomatoes to drain on paper towels.
