Ingredients:
- 1½ pounds russet potatoes, diced into 1/2″ cubes
- 1 pound smoked sausage, sliced
- 2 tablespoons olive oil
- ½ teaspoon seasoned salt
- ½ teaspoon Italian seasoning
- ½ large red bell pepper
- ½ large green bell pepper
- 1 small onion, diced
- Black pepper to taste
- Shredded parmesan cheese for garnish
Directions:
- In a large pan, sauté the onion in a tablespoon of butter over medium heat until the onion turns translucent.
- Once the onion is soft, remove it from the pan and set it aside.
- In a large skillet, heat 1 tablespoon butter and 1 tablespoon olive oil until the butter is melted. Add the diced potatoes, seasoned salt, Italian seasoning, and black pepper.
- Cover and cook, stirring occasionally, for about 15 minutes, or until the vegetables start to soften.
- After the initial 15 minutes, add the sliced sausage and continue cooking for an additional 10 minutes until the potatoes are tender and the sausage is cooked through.
- In the same skillet, add the onions and peppers, sautéing until the peppers are tender-crisp.
- If desired, sprinkle shredded parmesan cheese on top before serving.
