FRIED POTATOES ONIONS AND SMOKE POLISH SAUSAGE

Ingredients:

  • 1½ pounds russet potatoes, diced into 1/2″ cubes
  • 1 pound smoked sausage, sliced
  • 2 tablespoons olive oil
  • ½ teaspoon seasoned salt
  • ½ teaspoon Italian seasoning
  • ½ large red bell pepper
  • ½ large green bell pepper
  • 1 small onion, diced
  • Black pepper to taste
  • Shredded parmesan cheese for garnish

Directions:

  1. In a large pan, sauté the onion in a tablespoon of butter over medium heat until the onion turns translucent.
  2. Once the onion is soft, remove it from the pan and set it aside.
  3. In a large skillet, heat 1 tablespoon butter and 1 tablespoon olive oil until the butter is melted. Add the diced potatoes, seasoned salt, Italian seasoning, and black pepper.
  4. Cover and cook, stirring occasionally, for about 15 minutes, or until the vegetables start to soften.
  5. After the initial 15 minutes, add the sliced sausage and continue cooking for an additional 10 minutes until the potatoes are tender and the sausage is cooked through.
  6. In the same skillet, add the onions and peppers, sautéing until the peppers are tender-crisp.
  7. If desired, sprinkle shredded parmesan cheese on top before serving.
