Ingredients:
- 6 bone-in, skin-on chicken thighs
- 2 tbsp olive oil
- Salt and pepper to taste
- 1 small onion, chopped
- 6 cloves garlic
- 1 tsp thyme
- 1 cup bone broth
- ⅔ cup shredded or grated Parmesan cheese
- 3 tbsp heavy whipping cream
Instructions:
- Preheat oven to 400°F.
- Heat olive oil in a skillet over medium-high heat.
- Sear chicken thighs skin-side down for 2-3 minutes on each side, then remove from skillet.
- Sauté onion and garlic in the same skillet for 2-3 minutes.
- Add thyme and stir until fragrant.
- Pour in bone broth and whisk in heavy whipping cream.
- Gradually add Parmesan cheese, whisking until combined.
- Return chicken thighs to skillet, then roast in the oven for 15-20 minutes.
- Serve with sauce spooned over chicken.
