Ingredients:
- 1 1/2 lbs carrots, peeled and cut into 1-1 1/2 inch chunks
- 1/4 cup butter
- 1/3 cup packed light brown sugar
- 1/2 cup water
- Kosher salt, to taste
- Freshly ground black pepper, to taste
- 1/4 teaspoon ground cinnamon (optional)
- Pinch of ground cayenne pepper (optional)
- Chopped fresh parsley, for garnish
Instructions:
- In a large skillet, combine the carrots, butter, brown sugar, and water.
- Cover the skillet and cook over medium-low heat for about 10 minutes, or until the carrots begin to soften.
- Remove the cover and increase the heat to medium. Cook for an additional 8-10 minutes, or until the glaze thickens.
- Season the glazed carrots with salt and pepper to taste. Optionally, add ground cinnamon and a pinch of ground cayenne pepper for extra flavor dimension.
- Sprinkle the glazed carrots with chopped fresh parsley before serving.
Notes:
- Peeling the carrots enhances the aesthetic appeal of the dish, as the bright orange color is more pleasing.
- Cut the carrots into 1-1 1/2 inch segments, and halve thick ends if necessary.
- The small amount of cayenne pepper in this recipe doesn’t make it spicy; it adds depth of flavor.
