Ingredients:

  • 1 1/2 lbs carrots, peeled and cut into 1-1 1/2 inch chunks
  • 1/4 cup butter
  • 1/3 cup packed light brown sugar
  • 1/2 cup water
  • Kosher salt, to taste
  • Freshly ground black pepper, to taste
  • 1/4 teaspoon ground cinnamon (optional)
  • Pinch of ground cayenne pepper (optional)
  • Chopped fresh parsley, for garnish

Instructions:

  1. In a large skillet, combine the carrots, butter, brown sugar, and water.
  2. Cover the skillet and cook over medium-low heat for about 10 minutes, or until the carrots begin to soften.
  3. Remove the cover and increase the heat to medium. Cook for an additional 8-10 minutes, or until the glaze thickens.
  4. Season the glazed carrots with salt and pepper to taste. Optionally, add ground cinnamon and a pinch of ground cayenne pepper for extra flavor dimension.
  5. Sprinkle the glazed carrots with chopped fresh parsley before serving.

Notes:

  • Peeling the carrots enhances the aesthetic appeal of the dish, as the bright orange color is more pleasing.
  • Cut the carrots into 1-1 1/2 inch segments, and halve thick ends if necessary.
  • The small amount of cayenne pepper in this recipe doesn’t make it spicy; it adds depth of flavor.
  • This dish can be prepared ahead of time and stored in an airtight container in the fridge. When ready to serve, reheat the glazed carrots in a skillet over medium-low heat or in the microwave.
