HASHBROWN CHICKEN CASSEROLE

Ingredients:

  • 2 lbs frozen hash brown potatoes, Southern Style
  • 2 cups shredded cheddar cheese
  • 1/2 teaspoon salt and pepper
  • 1 cup frozen peas and carrots
  • 1/2 cup canned summer sweet corn
  • 2 cups sour cream or plain yogurt
  • 1 can cream of chicken soup
  • 1/3 cup milk
  • 3 cups cooked, shredded roasted chicken
  • Bread crumbs or Corn Flake crumbs

Directions:

  1. Preheat the oven to 400 degrees Fahrenheit.
  2. Spread the frozen hash brown potatoes in a 9 by 13-inch baking pan.
  3. In a large bowl, mix together the shredded cheddar cheese, salt, pepper, frozen peas and carrots, canned summer sweet corn, sour cream or plain yogurt, cream of chicken soup, milk, and cooked, shredded roasted chicken.
  4. Layer the mixture over the hash brown potatoes in the baking pan.
  5. Sprinkle bread crumbs or Corn Flake crumbs on top of the mixture.
  6. Bake for 1 hour or until the top is golden brown.
  7. Remove from the oven and let it cool slightly before serving.
  8. Enjoy your delicious hashbrown chicken casserole!
