Healthy Taco Salad with Doritos

Ingredients:

  • 1/4 cup olive oil
  • 1 pound 100% lean ground beef
  • 2 tablespoons taco seasoning
  • 1 medium head iceberg lettuce, chopped
  • 1 large tomato, chopped
  • 1-2 cups nacho cheese Doritos, crushed
  • 1 cup Catalina dressing
  • Optional garnishes: sour cream, guacamole

Instructions:

  1. Heat olive oil in a large skillet over medium-high heat.
  2. Add the ground beef and taco seasoning to the skillet. Cook until the beef is well-done, breaking it apart with a spoon as it cooks. Remove any excess fat, then allow the meat to cool.
  3. In a large bowl, combine the chopped iceberg lettuce, chopped tomato, crushed Doritos, and cooled cooked meat.
  4. Pour the Catalina dressing over the salad ingredients.
  5. Toss the salad until everything is evenly coated with the dressing.
  6. Serve the taco salad with optional garnishes such as sour cream and guacamole on top.
