Homemade Parmesan crusted chicken Caesar salad sub

Ingredients:

For the Chicken Cutlets:

  • Chicken breast cutlets, sliced thin or pounded thin
  • Seasoned breadcrumbs (mixed with grated Parmesan cheese)
  • All-purpose flour
  • Eggs (whisked)
  • Poultry seasoning
  • Lemon pepper
  • Olive oil for frying
  • Butter (a couple of tablespoons)

For the Caesar Salad:

  • Romaine lettuce, chopped
  • Shredded Parmesan cheese
  • Freshly ground black pepper
  • Caesar dressing (your favorite)

For the Sub:

  • Sub rolls (your choice)
  • Butter
  • Olive oil
  • Oregano
  • Garlic powder

For the Chicken Cutlets:

  1. Season your flour and breadcrumbs with poultry seasoning and lemon pepper. Combine them on one plate.
  2. Place whisked eggs on another plate.
  3. Dip each chicken cutlet into the flour, ensuring it’s coated evenly.
  4. Next, dip the floured cutlet into the whisked eggs.
  5. Finally, coat the cutlet with the breadcrumb and Parmesan cheese mixture, pressing it gently to adhere.
  6. Heat olive oil and a couple of tablespoons of butter in a skillet over medium-high heat.
  7. Fry the breaded chicken cutlets for about 3-4 minutes on each side or until they are crispy and light brown. Ensure the chicken is cooked through.

For the Caesar Salad:

  1. While the chicken is frying, prepare the Caesar salad. Chop the romaine lettuce, add shredded Parmesan cheese, and season with lots of freshly ground black pepper. Toss with your favorite Caesar dressing.

For Assembling the Sub:

  1. Melt butter in a saucepan and add olive oil, black pepper, grated Parmesan, oregano, and garlic powder. Mix well.
  2. Brush the inside and outside of the sub rolls with the seasoned butter and olive oil mixture.
  3. Warm the rolls in the oven at 350°F (175°C) for about 5 minutes.
  4. To assemble, place the crispy chicken cutlets inside the bread, then top with the Caesar salad.
