Ingredients:
- 1 tablespoon olive oil
- 1 rotisserie chicken, shredded
- 2 medium yellow onions, diced
- 4 cups chicken broth
- 1 tablespoon kosher salt
- 2 bay leaves
- 1 (8 oz) bag of baby carrots
- 1 medium rib celery, chopped into 1/4 inch cuts
- 1 tablespoon minced garlic
- 1/4 teaspoon dried thyme
- 1 (8 oz) bag of egg noodles
- Fresh parsley for garnish
Instructions:
- Using a large dutch oven, heat olive oil over medium heat and sauté the onions and garlic until translucent.
- Add the shredded chicken to the pot.
- Pour in the chicken broth and add the baby carrots, celery, dried thyme, salt, and bay leaves.
- Cover the pot and let it simmer until the carrots and celery are tender.
- Add the egg noodles to the pot and continue to simmer until the noodles are tender.
- Serve the soup hot, garnished with fresh parsley.
