Ingredients:

  • 2 tsp olive oil
  • ⅓ cup honey
  • ¼ cup soy sauce
  • 1 tbsp minced garlic (about 2-3 cloves)
  • 1 pound medium-sized shrimp, peeled and deveined
  • ½ to 1 tsp ground ginger (adjust to taste)
  • Green onion for garnish, chopped

Directions:

Step 1: Marinate the Shrimp

  1. In a medium-sized mixing bowl, whisk together the honey, soy sauce, minced garlic, and ground ginger until well combined.
  2. Pour half of this marinade mixture into a large Ziploc bag.
  3. Add the shrimp to the bag with the marinade, seal it while pressing out as much air as possible, and gently toss to coat the shrimp evenly.
  4. Place the bag in the refrigerator and let the shrimp marinate for at least 15 minutes, or up to 10 hours for deeper flavor.

Step 2: Cook the Shrimp

  1. Heat the olive oil in a large skillet over medium-high heat.
  2. Once the oil is hot, remove the shrimp from the marinade (discarding the used marinade) and place them in the skillet.
  3. Cook the shrimp for about 45 seconds on one side, until they start to turn pink.
  4. Flip the shrimp over to the other side.

Step 3: Finish Cooking

  1. Pour in the remaining half of the fresh marinade over the shrimp.
  2. Continue to cook for another 1 to 2 minutes, or until the shrimp are fully cooked and the sauce has thickened slightly. The shrimp should be opaque and coral in color when done.

To Serve:

  1. Serve the honey garlic shrimp over a bed of brown rice or your choice of side.
  2. Garnish with chopped green onions for a pop of color and freshness.

Tips:

  • Make sure not to overcook the shrimp, as they can become tough and rubbery. They cook quickly, especially when they are medium-sized.
  • You can add a bit of cornstarch to the marinade if you prefer a thicker sauce.
  • Feel free to adjust the amount of garlic and ginger to suit your taste preferences.
  • If you like heat, a pinch of red pepper flakes can add a nice kick.
