Ingredients:
For the Bread:
- 1/3 cup melted butter
- 1 cup sugar
- 3 tablespoons of lemon juice
- 2 eggs
- 1 1/2 cups all-purpose flour
- 1 teaspoon baking powder
- 1 teaspoon salt
- 1/2 cup milk
- 2 tablespoons of grated lemon peel
- 1/2 cup chopped walnuts (optional)
- 1 cup fresh or frozen blueberries
For the Glaze:
- 2 tablespoons of lemon juice
- 1 tablespoon melted butter
- 1 cup confectioners’ sugar
Instructions:
- Preheat your oven to 350°F (175°C) and grease a loaf pan.
- In a mixing bowl, blend the melted butter with 1 cup of sugar, 3 tablespoons of lemon juice, and the eggs.
- In a separate bowl, mix together the all-purpose flour, baking powder, and salt.
- Stir the dry ingredients into the egg mixture, alternating with the milk.
- Add the grated lemon peel, chopped walnuts (if using), and the blueberries. Gently fold them into the batter.
- Pour the batter into the greased loaf pan.
- Bake in the preheated oven for 61 to 71 minutes, or until a toothpick inserted into the center comes out clean.
- While the bread is baking, prepare the glaze. In a small bowl, combine 2 tablespoons of lemon juice, 1 tablespoon of melted butter, and 1 cup of confectioners’ sugar. Mix until smooth.
- Once the bread is done baking, remove it from the oven and allow it to cool in the pan for a few minutes.
- Drizzle the lemon glaze over the warm bread.
- Allow the bread to cool further in the pan for about 10 more minutes, then transfer it to a wire rack to cool completely.
- Slice, serve, and enjoy your homemade Lemon Blueberry Bread!
