Kielbasa Potato Soup

Ingredients:

  • 1 pound smoked kielbasa, sliced
  • 8 medium-sized potatoes, peeled and cubed
  • 2 cups frozen corn
  • 2 cups chicken broth
  • 2 sticks celery, sliced
  • 1/4 cup sliced carrots
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 & 1/2 cups whole milk
  • 2/3 cup shredded cheddar cheese

Instructions:

  1. Cook the sliced kielbasa until browned. Set aside.
  2. In a large pot, combine potatoes, corn, chicken broth, celery, and carrots. Add garlic powder, onion powder, salt, and pepper. Bring to a boil, then reduce heat and simmer for about 15 minutes or until potatoes are soft.
  3. Add the whole milk, shredded cheddar cheese, and the cooked kielbasa to the pot. Cook on low for an additional 15 minutes, stirring occasionally.
  4. Serve the Kielbasa Potato Soup hot, garnished with additional shredded cheese if desired
