Mandarin Orange Salad

Description: Mandarin Orange Salad is a delightful and refreshing dish that’s perfect as a side dish or dessert. Made with just a few simple ingredients, including vanilla instant pudding mix, crushed pineapple, mandarin oranges, and Cool Whip, this salad is creamy, fruity, and oh-so-delicious. Ingredients:

  • 1 package Vanilla Instant Pudding Mix (use dry)
  • 1 large can Crushed Pineapple (undrained)
  • 2 medium/large cans Mandarin Oranges (drained)
  • 1 package Cool Whip (8 oz), you could use fat-free

Directions:

  1. In a large mixing bowl, combine the Cool Whip and dry vanilla instant pudding mix. Do not make the pudding; use it dry.
  2. Add the undrained crushed pineapple and both cans of drained Mandarin Oranges to the bowl. Use as many mandarin oranges as you like, adjusting to your preference.
  3. Mix all the ingredients together until well combined.
  4. Save a few mandarin oranges to decorate the top of the salad.
  5. Refrigerate the salad until it thickens again, which may take a couple of hours before serving.
  6. Serve as a side dish with a meal or as a dessert with ice cream.
  7. For a healthier version, choose low/no sugar instant pudding mix and Cool Whip, and use fresh mandarins. Whipped Cool Whip is recommended for the salad.
