Ingredients:

  • 1 lb. ground beef
  • 1 large egg
  • 1/3 cup breadcrumbs
  • 1/4 cup Parmesan cheese
  • 1 tablespoon minced garlic
  • 1 tablespoon fresh chopped parsley
  • Salt and pepper to taste
  • 1 tablespoon olive oil
  • 2 cups marinara sauce
  • 8 mini hoagie rolls
  • 12 slices Asiago cheese

Instructions:

  1. Preheat the Oven: Preheat your oven to 350 degrees Fahrenheit (175 degrees Celsius). Prep a baking pan with nonstick spray.
  2. Prepare the Meatballs:
    • In a mixing bowl, combine the ground beef, egg, breadcrumbs, minced garlic, Parmesan cheese, fresh chopped parsley, salt, and pepper. Use your hands to work the ingredients together.
  3. Form Meatballs:
    • Use an ice cream scoop to form the mixture into meatballs. This recipe yields about 28 to 30 meatballs.
  4. Sear the Meatballs:
    • Heat olive oil in a skillet over medium heat.
    • Add the meatballs one at a time to the heated skillet and cook for about 5 minutes, or until they are seared on all sides.
  5. Bake the Meatballs:
    • Place the seared meatballs on a parchment-covered baking pan and transfer to the preheated oven.
    • Bake for 12 minutes, then remove from the oven and set aside.
  6. Prepare the Rolls:
    • Cut an oval on the top of each hoagie roll, leaving about 1/2 inch on the ends and sides.
    • Use a knife to hollow out the top of each roll.
  7. Add Cheese and Bake:
    • Place the rolls on the baking pan and lay 1 slice of Asiago cheese in the hollowed-out area of each roll.
    • Return the pan to the oven and bake for 8 minutes.
  8. Assemble the Subs:
    • Add 2 tablespoons of marinara sauce on top of the cheese in each roll.
    • Place 3 meatballs on top of the sauce in each roll.
    • Add more marinara sauce on top of the meatballs.
    • Sprinkle grated Parmesan cheese on top of the marinara sauce.
  9. Final Bake:
    • Return the pan to the oven and bake for an additional 6-8 minutes, or until the cheese is melted and bubbly.
