Mexican Casserole

Ingredients:

  • 1 pound ground beef
  • 1 (15 oz) can sweet corn, drained
  • 1 cup mild, chunky salsa
  • ¼ cup sliced black olives
  • 3 ½ cups cooked egg noodles
  • 1 (15.25 oz) can kidney beans, drained and rinsed
  • ¼ cup taco sauce
  • 1 (1.25 oz) package taco seasoning mix
  • ½ cup tomato sauce
  • Salt and pepper to taste
  • Crushed tortilla chips
  • Sour cream
  • Diced tomatoes
  • Sliced green onions
  • Shredded cheese (cheddar or Mexican blend)

Directions:

  1. Preheat the oven to 350 degrees Fahrenheit.
  2. Brown the ground beef in a skillet over medium-high heat until completely cooked.
  3. Season the beef with chili powder, cumin, oregano, salt, and pepper. Saute for another minute.
  4. Stir in the salsa, drained sweet corn, drained and rinsed kidney beans, taco sauce, taco seasoning mix, and tomato sauce. Simmer for 5 minutes.
  5. Grease a 9×13 inch baking dish and spread crushed tortilla chips over the bottom.
  6. Layer the cooked egg noodles on top of the tortilla chips.
  7. Spread the meat mixture over the noodles.
  8. Spread a layer of sour cream over the meat mixture.
  9. Top with diced tomatoes and sliced green onions.
  10. Sprinkle shredded cheese over the top.
  11. Bake in the preheated oven for 30-40 minutes or until bubbly and cheese is melted.
  12. Serve hot and enjoy your Easy Mexican Casserole!
