Mom’s Picadillo con Papa

Ingredients:

  • 1 lb. ground beef
  • 2 tbsp olive oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 2 tomatoes, diced
  • 1 green bell pepper, diced
  • 1 tsp cumin
  • 1 tsp oregano
  • 1 tsp salt
  • 1/4 tsp black pepper
  • 3 medium potatoes, peeled and diced
  • 1 cup beef broth
  • 1/4 cup green olives, sliced
  • 2 tbsp capers
  • 1/4 cup raisins
  • Fresh cilantro, chopped (optional)

Instructions:

  1. Heat olive oil in a large skillet over medium-high heat. Add the ground beef and cook until browned, breaking it up into small pieces as it cooks.
  2. Add the diced onion and minced garlic to the skillet and cook until softened, about 3 minutes.
  3. Stir in the diced tomatoes and green bell pepper, and cook for an additional 5 minutes.
  4. Add the cumin, oregano, salt, and black pepper to the skillet, stirring to combine.
  5. Add the diced potatoes and beef broth to the skillet, stirring to combine. Bring the mixture to a simmer.
  6. Reduce the heat to medium-low and let the mixture simmer, covered, for about 20-25 minutes or until the potatoes are tender and the liquid has reduced.
  7. Stir in the sliced green olives, capers, and raisins. Simmer for an additional 5-10 minutes to allow the flavors to meld.
  8. Garnish the Picadillo con Papa with chopped fresh cilantro, if desired.
  9. Serve hot with rice or tortillas, and enjoy Mom’s delicious Picadillo con Papa!
